Red Rice Wine Chicken or Hong Zao Chicken (红糟鸡) is a popular choice for family dinners, special occasions, and dinner parties. 

This dish is prized for its delicate and aromatic flavor, and the tender, juicy texture of the chicken. Because of that, this dish which was previously most commonly known as belonging to the Fuzhou dialect group, is now very popular among other dialect groups today.

Because of the fermentation process, the wine is a natural probiotic, and is rich in antioxidants, vitamins, and minerals. It is popular in Traditional Chinese Medicine so when used in cooking, it is thought to help improve digestive health and promote overall wellness.

Red Rice Wine Chicken (红糟鸡) Recipe with Ye Traditions

Ingredients:

  • 1 whole chicken, cut into pieces
  • 1 1/2 cups red rice wine from Ye Traditions
  • 1 1/2 cups red rice lees (the byproduct of the fermentation)
  • 2 inches bentong ginger, grated
  • 3 tablespoons light soya sauce
  • 2 tablespoons sesame oil
  • 500ml - 1l of water (Depends how much broth you want)
  • 1 tablespoon vegetable oil

Instructions:

  1. In a large bowl, combine the chicken pieces with 1/2 cup of red rice wine, 1/2 cup of red rice lees. Marinate for at least 2 hours, or overnight for best results
  2. Heat the sesame oil in a large wok over medium heat
  3. Add ginger into the wok
  4. Once the ginger is light brown, add the chicken pieces to the pan and cook until browned on both sides
  5. Add in 1 cup of red rice lees and reduce the heat
  6. Stir fry until the chicken is partially cooked
  7. Add in water so that it covers the chicken
  8. Add in soya sauce or salt (fish sauce is a good alternative)
  9. Cook in low heat for 15 mins until the chicken is cooked
  10. Serve hot, garnished with green onions, if desired.
