Red Yeast Rice Lees (红糟) — the fermented lees remaining after wine production. Adds colour, probiotics, and an intensely savoury, slightly tangy flavour to dishes.
Both are SFA licensed, with no preservatives, no salt, no added sugar — brewed in Singapore in small batches using a century-old Ye Traditions family recipe.
How to Make 红糟鸡 (Hong Zao Chicken Soup)
Ingredients (serves 4):
- 1 whole kampung chicken, cut into pieces
- 200ml Ye Traditions Red Rice Wine
- 200g Red Yeast Rice Lees (included)
- 5–6 slices fresh ginger
- 1 tbsp sesame oil, salt to taste
Method:
- Heat sesame oil, sauté ginger until fragrant.
- Add chicken, sear until lightly browned.
- Stir in red yeast rice lees to coat the chicken.
- Add Red Rice Wine and 500ml water. Bring to a boil.
- Simmer covered for 25–30 minutes. Season and serve with steamed rice.
