- 200ml Ye Traditions Red Rice Wine
- 200g hong zao lees (red yeast rice)
- Fresh ginger (sliced)
- Sesame oil
- Salt to taste

Instructions:
1. Clean and cut chicken into pieces
2. Marinade with red yeast rice for few hours
3. Heat sesame oil, add ginger until fragrant
4. Add chicken, stir-fry 3-5 minutes on low heat
5. Pour in water to cover
6. Boil then simmer 30-40 minutes
7. Add in rice wine
8. Season with salt

Pro tip: Use older chickens for richer broth.

Instructions:

2. Heat sesame oil in pot, add ginger slices until fragrant
3. Add chicken pieces, stir-fry for 3-5 minutes on low heat

6. Turn off fire, and add in red rice wine
7. Season with salt if needed
